The Avola almond includes three cultivars originally from the area: Pizzuta, Fascionello and Romana. Pizzuta is the "perfect" almond, the most sought after in the gourmet confectionery. It has a hard and smooth shell. A flat ellipse-shaped with a typical and elegant point, the large seeds are wrinkled, homogeneous and leather-colored; an oil content of around 54%, few fibers and contains to a greater extent amygdalin, also excellent for almond milk. Rich in phosphorus, magnesium, potassium, vitamins E and B2.
